Another gem of a country in Central America, Nicaragua is non stop fun! You’ll want to take your time with this country because there is a lot to see. And we’ve known more than one person planning to stay for a week and ending up there for months!

Ometepe is a great place to start with a little lake side relaxing. But if you’re after gorgeous beaches, you can’t miss the Corn Islands. Little Corn Island is a paradise right out of your old desktop screensaver.

When you’re done with the island life (are we ever?), head back to the mainland for a little adventure. If you’re game, you have to try volcano boarding. It’s pretty much exactly as it sounds, cruising down the slope of a volcano on a snowboard!
